"Healthy food" gets such a bad rap. I've found food that is good FOR you is also good to your tastebuds.
I had never had lentil soup until recently when I had it in a greek restaurant. I loved it so I thought I would try it myself and have concocted my own recipe and thought I would share. BTW, I never measure anything so feel free to play with the ingredients according to your own tastes.
INGREDIENTS
1 large onion (chopped)
1/4 cup olive oil
4 or 5 carrots (chopped)
3 or 4 stalks of celery (chopped)
3 T. minced garlic
1 T dried oregano (OR USE SOME FRESH!)
1 bay leaf
1 T dried basil (OR USE SOME FRESH!)
1 (28 oz) can crushed tomatoes
3 c dry lentils (I used a couple different kinds together)
4 c. broth (i use beef broth, but if you want to stay vegetarian just use vege broth)
couple of handfuls of spinach
salt and pepper to your taste
Sauté onion, carrots, celery, and all the spices in olive oil for about 10 min. This will smell amazing especially if you use fresh spices.
Stir in lentils, tomatoes, spinach and broth and bring it to a boil. Simmer - it will be "done" in about an hour or so but I simmer it all day.
Yummy.
