Sweet n' Spicy Salmon

This is without question one of our favorite things to eat.  People will think you are a gourmet cook when you make this for them because it's ohhh so yummy and the presentation is fabulous.  It's also guilt free eating because salmon is so good for you!


Ingredients

1 1/2 cups apricot nectar
3 or 4 chopped green onions
2 tablespoons honey
2 tablespoons  soy sauce
1 tablespoon grated fresh ginger
2 cloves minced garlic
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cinnamon
2 salmon filets without skin

Directions

In a saucepan over medium heat, mix together the apricot nectar, honey, soy sauce, ginger, garlic, cinnamon and cayenne. Bring to a boil, then reduce heat to medium-low, and simmer for about 20 minutes, or until reduced by about half. Stir occasionally to prevent burning.

Place salmon filets in greased oven dish and pour mixture over them. Remove 1/4 cup of the glaze for presentation on the plate.  Sprinkle the chopped green onions over the salmon and bake at 350 for about 10-12 minutes (turning them once) and then remove the lid and broil until the edges get a little crispy.

Serve with remaining glaze.
