This is true in nutrition, as well as anything else in life. You must plan ahead or you will set yourself for failure. You will almost always make a bad choice of what to put in your mouth if you wait until you are pressed for time and starved enough that you would even eat a chicken mcnugget.
My daughter recently made me this wonderful sandwich and I loved it so much I made another for lunch today. It's no big secret that taking the healthy route for your food takes a bit more time, but I also made another sandwich for tomorrow and wrapped it in foil and put it in the fridge so I can grab it and stick it in the oven when I'm hungry. It can't get easier than that!
For mine, I used cracked wheat sour dough bread - but try different kinds of bread. Your local whole foods or grocer with healthy options will have some bread that isn't a cousin to a candy bar. ; ) I sliced up some red peppers, onion, mushrooms, spinach and put the wonderful veges in between some low fat pepper jack cheese. Wrap that puppy up and put it in the oven for 15 or 20 minutes. Jenna put some balsamic vinegar on hers and of course you can add whatever condiment that suits you.
This is a meatless lunch and I promise you won't miss it at all. Plus, you are giving your body some vege fuel and you have lunch waiting for you tomorrow!
